How do I buy fresh clams, oysters, or mussels?
Unless you're buying them already shucked, whether fresh or frozen, bivalve shellfish--such as clams, oysters, and mussels--should be alive until you cook them. Their shells should be closed, or, if they're open, should close quickly when you tap them. Any that don't close are dead and are not safe to eat.
