How do I clean sand and grit from clams? |

Clams whose shells stay open slightly (like razor clams, geoducks, and soft-shell clams) tend to be full of sand, while most hard-shell clams (including littlenecks, cherrystones, and butter clams) usually only need to have their outside shells scrubbed.
After you buy or collect them, the clams should be covered in a solution of approximately 1 part salt to 12 parts water and left in the refrigerator overnight. Adding a bit of cornmeal to the water should irritate the clams into expelling most of the trapped sand. If necessary, run cold water over the cooked clams to rid them entirely of sand.
