What is citrus "zest," and how do I use it? |

Zest is the outer, colored part of an orange, lemon, lime, or other citrus fruit peel. It contains a high concentration of the fruit's essential oil, and so is intensely flavorful. You can use zests in baked goods and candies, with meats, in sauces, in salad dressings--anywhere a hint of citrus would taste good. Don't use much, though: A quarter of a teaspoon (about 1 milliliter) is often more than enough to flavor a sauce or dressing.
To zest a fruit, wash and dry it. You can use a specialized citrus zester or grater, but a regular hand grater works too, as does a vegetable peeler for larger pieces. Make sure you only get the colored part of the peel, and not the white pith underneath it--this is bitter and will spoil the flavor of the zest. If you peel too much, you can freeze what you don't use in a sealed plastic bag.
