I would like to become a vegetarian, but have a hard time thinking about giving up meat entirely. How can I do it?
The first thing to know is that there are several kinds of vegetarianism. No vegetarians eat meat, poultry, or fish, but many do eat cheese, eggs, and other foods with animal origins. They are called "lacto-" (milk) or "ovo-" (egg) vegetarians, depending on what they draw the line. Vegans eat no animal foods at all (not even honey, which comes from bees).

Many people who are attracted to the health benefits of vegetarianism practice near-vegetarianism--they eliminate red meat and perhaps chicken from their diets, but still eat some fish and seafood.

As with any major diet change, it can be easier to approach vegetarianism slowly. Try reducing, then eliminating, your consumption of red meat. Then slowly begin replacing chicken and fish with plant-based proteins, such as beans, tofu and other soy products. Give yourself time to learn about plant-based foods: what they are, what essential nutrients they provide, and how to prepare them for maximum health and enjoyment.
