How can I speed up my chicken stir-fry?
A great technique for preparing chicken stir-fry is to cut up the chicken and then drop the pieces into boiling water. Boil them for two to three minutes, then remove. Check the inside of a test piece to make sure the chicken is cooked throughout (if it's still pink, toss it back in the boiling water). Now, after a quick 30 second stir in the wok to pick up flavor, your chicken will be ready--not to mention free of bacteria such as salmonella.
