How do I make juicy hamburgers? |

- Choose ground beef that's not too lean--about 15 to 20 percent fat is good.
- Add Worcestershire or steak sauce to the meat before cooking.
- Handle the meat as little as possible when you are forming the patties, as overhandling compacts it.
- Don't compress the meat with a spatula as it's cooking.
- Don't add salt before cooking--that will draw out the meat juices and dry out the burgers.
