How do I keep my cookies from burning? |

There are a few factors that contribute to burnt cookies. Naturally, if you leave them in the oven too long, or if the oven runs hot, they may char all over. But if you know your oven's quirks and aren't leaving the cookies in too long, look to your cookie sheets.
If a pan is too thin, cookie bottoms may burn before the tops are cooked through. Try an insulated pan, which has two layers--one that absorbs the heat first and one that the cookies rest on. Dark colored cookie sheets also absorb more heat and may burn cookies faster than shiny ones, which reflect heat. Finally, sheets that aren't full of cookies can absorb too much heat and burn your half-batch. Put a metal baking pan over the empty part of the cookie sheet to absorb the heat excess heat.
