Is it possible to make low- or no-fat gravy?
No-fat gravy is probably available in a jar, but one shudders to think what it's made of. You can make lower-fat gravy by doing one or more of the following:
  • Chill the pan juices and skim off the fat that rises to the top. Then reheat and make the roux.
  • Use cornstarch or arrowroot to thicken gravy. These starches don't require fat to work, although flour does.
  • Add fruit juice to gravy for added flavor with no added fat.
