How do I keep cheese from molding? |

Exposure to air makes cheese mold, so keep it tightly wrapped in plastic or enclosed in a plastic container with a tight-fitting lid. Put a few cubes of sugar in the plastic container to further retard mold growth.
To keep block cheeses like cheddar or mozzarella from molding, shred the cheese and freeze it. Frozen cheese thaws in minutes.
