Is it important to rinse and soak rice before cooking it? If so, why? |

It won't hurt anything if you don't rinse and soak, but if you do, you'll have tastier rice. Rinsing cleans off excess starch, which can make rice gummy once cooked. Soaking allows for maximum expansion of the rice, plus it shortens the cooking time.
To rinse, pour the desired amount of uncooked rice into a pot or bowl filled with cold water. Agitate the rice with a utensil or your fingers. Drain the water and repeat a few times. Refill the container one final time and let the rice soak about an hour in the water. Drain once more before adding cooking water.
