What's the best way to store potatoes? |

Potatoes should be stored in the dark, at temperatures of about 50F (10C). Keep them out of plastic bags, since they need air circulation to stay firm and edible. Try a wooden box or two paper bags, one inside the other.
The cool temperature is crucial: Temperatures colder than 40F (7C)--for instance, in the refrigerator--cause some of the potatoes' starch to convert to sugar, changing their taste. If kept at room temperature for more than a week, potatoes start shriveling or sprouting, and should be used as soon as possible.
