LEARNLETS
How do you "section" an orange?
Sectioning an orange--usually for use in a fruit salad or as a cooking garnish--involves removing the seeds and most of the membrane from each of an orange's sections.

Start by peeling the orange: cut off the ends with a sharp paring knife, then set it on one flat end on a cutting board. Slice off the peel and outer membrane in strips an inch (2.5 centimeters) or less in width to expose the cells of the orange.

Now hold the peeled orange over a bowl or sink to catch the juice. Insert your paring knife into each section, directly next to the membrane, and slice the fruit's meat free. Remove the meat and pick out the seeds.
