How do I preserve my wedding cake?
1. To preserve a wedding cake top for your first anniversary, place it in a cake box usually provided by the bakery or bakery supply shop.

2. Freeze the cake top for 3 hours, placing it as close to the back (the coldest spot) of the freezer as you can. The less contact the cake has with air the better the results, so immediately after cutting into your cake at the wedding have a friend take care of the cake top.

3. After the cake top has been in the freezer for 3 hours, take it out of the cake box and wrap well in high-quality plastic wrap. Place it back into the box and wrap it with two layers of foil or freezer wrap and then put it back into the freezer.

When you're ready to eat the cake top take the box out of the freezer and remove all wrapping. Let it thaw a day or two before eating.

Note: You may also consider placing the cake in a plastic container with a tight sealing lid made for freezing. This eliminates the need for a cake box and all the wrapping.

Be forwarned that the cake may not taste as good as when it was fresh, whether wrapped or not. Some bakeries offer a discount a year after the wedding to prepare a fresh cake for you on your anniversary using the same recipe.
