How can I get my children to eat their vegetables? |

Offer them a choice of a couple of veggies. They get to choose, but they eat something good either way. For instance, "Would you like peas or carrots?"

Get sneaky: shred the vegetables (squash, carrots, and zucchini work well) into spaghetti sauce, chili or the like. The flavor won't be much different, and everyone gets a healthy dose of vitamins.

Eat them yourself! If kids see their parents eating a variety of foods, they will do the same. Also, once they're 5 and up, have them make a food pyramid, with spaces for the correct mumber of servings. Get some reusable stickers and have the kids try and fill up the pyramid each day for a few weeks or months.

Try giving them smaller portions, which are less intimidating than large ones. You can also try cooking them in different ways--perhaps the kids will like something that's cooked softer or more firm than usual.

One word: sauce! Mix ketchup, mayo, and a little mustard into a pinkish sauce--then give it to them in a dipping bowl that's placed at the center of a plate, with the veggies surrounding the bowl. Cheese sauce works great too.
