How do I cook a raw artichoke on a stove?
If you like your artichokes very well done, try cooking them in the microwave.

1. Begin by removing the bottom leaves and trimming the stem until it is flat and flush with bulb. Be careful removing the very inner portion of the choke.

2. Pound the artichoke upside down on the middle of the sink (like a head of lettuce), then scoop out the "choke" part in the center as much as possible.

3. Put the rest of the artichoke in a microwave-safe casserole with lemon juice, olive oil, garlic, sliced onion, and other seasonings. Add water almost to the tops of the leaves.

4. Cover with plastic wrap and cook for 50 minutes on high.

5. Carefully turn artichokes after that and cook for another 30-50 minutes. Cooking times will vary depending on the size and number of artichokes you cook.


1. First thoroughly wash the artichoke (dirt can get caught between the leaves and it's really gross to find when eating!).

2. Cut off the stem so the artichoke sits upright by itself.

3. Put it in a sauce pan or boiling pot that has a nice snug lid.

4. Fill the pan with a couple inches of water and one teaspoon of olive oil.

5. Turn it on high heat.

6. When the water boils, turn the heat down to simmer/low and then put the cover on the pot.

7. Then the timing process begins: If the artichoke is small, it will take only 20-25 minutes of simmering (water should be moving only slightly, not boiling anymore). If it's large, it will take 40+ minutes. A jumbo one can take an hour.

8. You can tell when it's done by sticking a thin, pointed knife into the top-middle and pushing it straight down. If it goes all the way down easy, it's ready!


You can also use a pressure cooker for cooking artichokes on the stove.
Place the washed artichoke in an artichoke holder (an artichoke-size metal basket--available at kitchen speciality stores--that sits about 1.5 inches/4 centimeters off the surface.)
Fill the pressure cooker with about 1 inch (2.5 centimeters) of seasoned water (try a tablespoon of Italian dressing).
Turn heat to high until the pressure cooker's bobber reaches a hard rock, then turn the heat down to medium or to a gentle rock.
Cook medium artichokes for about 18 minutes, and large ones for 25 minutes.
