What kind of adjustments do I make when baking or boling at a high altitude? |

To bake cookies or a cake at a higher elevation, reduce each teaspoon of baking powder by an eighth of a teaspoon, reduce the sugar just a little, and increase the liquid a little too. Bake your goodies in an oven 25 degrees hotter than usual and reduce the baking time by about one-fifth. This will prevent them from rising too fast before they are fully cooked. For yeast breads, shorten the time you allow the dough to rise, but punch the dough down twice.

Water boils at a lower temperature when you're cooking at a high altitude. It can take much longer to boil your food or even to get your cup of tea hot.
