How do I keep my lasagna noodles from falling apart when I handle them? |

Don't cook them--really! To compensate, use abount twice as much sauce as a normal recipe to provide enough liquid to cook the noodles while it bakes.

If your lasagna noodles always seem to fall apart, you might be overcooking them. Lasagne noodles should be cooked al dente, which means cooked just enough to retain a semi-firm texture (about five minutes is usually fine).
You may also be trying to handle your noodles while they're still hot. They'll be much easier to work with if you run them under cold water first. Don't drain the water until you're ready to layer your noodles, or else they'll start to stick together.
