How do I keep hollandaise sauce from separating?
Perfect hollandaise sauce requires constant stirring over low heat. Use a whisk to stir the sauce while it's on the stove. A double boiler, which heats the sauce indirectly, will yield the best results. If you use direct heat, make sure the burner is very low. If it's too hot to touch the side of the pan comfortably, it's too hot for the sauce.
