How do I make a low-fat cake?


Make an angel cake. Angel cakes are white and light in texture. They have no butter and use only egg whites (no yolks), so have almost no fat. Glaze the cake or serve it with fresh berries rather than butter frosting to keep it healthy.

You can substitute for some of the butter with pureed fruit like apple sauce, mashed bananas, or baby food apricots, peaches, or prunes. (Prunes go very well in chocolate cakes). However, there is no hard and fast rule about how much fruit puree substitutes for how much butter, so you have to do a little experimenting. Start with 1/2 cup puree substituting for 1/4 cup butter, and then reduce the liquid if the batter looks too runny.
