How do I keep brown sugar from hardening?


Brown sugar hardens because it absorbs moisture from the air around it. Store it in an airtight bag or container with a small piece of apple, bread, or citrus rind, to absorb any excess moisture.

If it's already hard and you want to soften it, sprinkle a few drops of water on a chunk of the sugar, wrap in aluminum foil, and bake in a 300F oven for 5 minutes.
