Step 3:
Add the wine
Open the bottle of wine and add all of it to the flavorings mixture. Place the saucepan back on the stove. Leave the heat on low. The wine should never come to a boil, because that would ruin its flavor and burn off most of the alcohol.
Take the fruit you've set aside, slice it up, and add it to the mulling wine. The sweet, tangy juices of the fruit will add even more complexity to your creation.
Let the wine steep for 30 to 40 minutes on the stove. It's important to keep it covered, so all the flavors get a chance to mingle (this is the actual practice of "mulling" the wine). But it's also important to lift the lid and stir from time to time. (Plus, the smells are so tantalizing, you'll want just a little to escape and make your home smell festive).
