Step 5: Mull wine in the microwave (optional)

If you're in a hurry or just mulling wine for one or two, here's how to do it in the microwave:
  • Estimate the amount of wine, spices, fruit, and sugar and water, depending on the number of glasses you're making. Break a stick of cinnamon into a smaller size for mulling a single glass of wine, or you can use a whole stick and reuse it in other glasses. You may be able to reuse whole cloves, as well.

  • Skip the zest (grated citrus skin, see Step 1) and just use a few fruit slices, without the skin. (Be sure to remove the white pith underneath the skin, as well, because it's bitter.)

  • If you're using sugar, make sure it's stirred into the water and wine and dissolved before heating. You can also use herbal or citrus tea in place of the sugar and water. The tea must be brewed and steeped ahead of time.

  • Heat all the ingredients at once in the microwave. It will only take one minute on high power (depending on the wattage of your microwave). To make sure the mixture doesn't boil, microwave the drink in 20-second intervals. Check at each interval to see how hot the drink is.
Once the wine has mulled, remove it from the microwave and pour it through a strainer, cheesecloth, or pasta colander. Pour the mixture into a glass or mug and garnish with a candy cane if you like.
