Once you have a lobster, there are a few things you should do before you cook it: Make certain the lobster is still alive. Lobsters must be alive when cooked, because once dead, the meat begins decomposing and is no longer edible. Lift the lobster by its central body shell and check to see if the legs or tail are still moving.
Boil water. Put enough water in the pot so you can fully submerge the lobster. Bring the water to a full boil.
Add salt. Always cook lobster in salt water. Add about 2 tablespoons (30 milliliters) of salt for every quart (1 liter) of water. You can also boil your lobster in actual seawater.
